Scampi Alla Coppa (Shrimp and Coppa)
4 wooden skewers, soak in water overnight 1 bottle of Zia’s White Wine, Lemon & Butter Sauce 1 small package of mushrooms 1 tablespoon of capers 24 jumbo shrimp 24 thinly slices pieces of Hot Coppa
In a small sauce pan add Zia’s White Wine, Lemon & Butter sauce, sliced mushrooms, and capers. Heat sauce thoroughly until mushrooms are cooked (about 5 minutes). Take one slice of Hot Coppa, fold in half, wrap around shrimp and skewer. Place 6 shrimp on each skewer. Charbroil shrimp for 3 to 5 minutes on each side until shrimp are fully cooked. Remove shrimp from skewer and top with sauce.
